Cabbage Salad

Comment:  I ate this often on my trips to Romania and Germany.

  • Shred a head of cabbage 'very' thinly. Soak in water, add a couple of tablespoons of sugar for about an hour, then drain and let air dry a bit.

  • Peel and cut in chunks of slices of cucumber, lots of it.

  • Slice a large red/purple onion.

  • Add at least 1/2 cup vinegar and salt and pepper to taste.

  • Top with sliced tomato.
