Kohlrabi (German Turnip) Soup

Comment:  It is a very light and simple soup, especially nice for summer.

  • 2 kohlrabi

  • 1 carrot

  • 1 root parsley

  • 2 tablespoons oil

  • 1 tablespoon flour

  • salt & pepper

  • sour cream

Cut the vegetables into cubes; sauté in oil until medium soft.  Add flour, water, salt, and pepper (some like to add red paprika as well).  Boil on low heat.

Before serving, add sour cream.  You can add sliced parsley, gnocchi, or potato balls in it.
